We'll be making Aviyal with Klippingegård’s extra-large asier (a type of cucumber traditionally used in Denmark for pickling), the finest beans, carrots, pumpkin and whatever else looks irresistible on the day. What better way to celebrate Onam than with a comforting bowl of aviyal and steamed rice?
Aviyal is a beloved South Indian vegetable dish from Kerala: a fragrant, gently spiced curry of seasonal vegetables cooked with coconut and yogurt. It’s the kind of food that tastes like home–and one of the classics of the Onam feast.
