We're excited to announce that on July 7th, our next Taco Tuesday will be with Beatriz Maida of Bar Pájaro.
Beatriz started as an anthropologist. That training took her deep into Oaxacan producer communities, working alongside the families behind the spirits rather than just tasting what ended up in bottles. That research became Pájaro, her own collection of mezcals made in collaboration with a fifth-generation maestro mezcalero in Miahuatlán and the Santiago Méndez family in San Dionisio Ocotepec.
Behind the bar, Beatriz works experimentally. She builds cocktails around local and seasonal products wherever she lands, letting the place inform the drink. For the evening, that means Copenhagen: its ingredients, its season, filtered through everything she's picked up moving between producer communities and bar counters across the world. Generous, unfussy, and full of stories.
We'll have a shorter bar tasting menu to complement her drinks, and our full Sanchez menu runs all night.
