Taste of Lejre: Farm Visit & Long Table Lunch at Hegnsholt
Join Madland for a spring day in the countryside and look forward to a menu that celebrates the organic quality ingredients of the Lejre area and all the greenery emerging from the earth in April. Founder of the versatile small-scale farm Hegnsholt, Johanne Schimming, and independent chef Eline Lange invite you to a long table lunch in the courtyard at Hegnsholt followed by a tour of the fields and greenhouse. With Hegnsholt, Johanne Schimming aims to contribute to life and job opportunities in rural areas and to contribute to the debate on a green and local transition of our agriculture. The farm animals are fed with the city's waste products and provide fertilizer for the greenhouse's vegetable and berry production. Hegnsholt is a social-economic enterprise and primarily offers jobs to people with special needs. Eline Lange also resides in the local area and is an independent chef, educator, and consultant specializing in local, plant-focused cuisine. Eline clearly influences and flavors her food with the local area and the season. The menu consists of: - Rillettes of the farm's waste-fed pigs - Fresh cheese on milk from Søtofte and the freshest herbs - Sourdough bread made from freshly ground flour from Quartz Mølle // - Salad Nicoise with the farm's own eggs from waste-fed chickens, the freshest spring greens from Godis Grønt, the wildest herbs from Boserup Skov, and Ingrid peas from Østagergaard // - Baked cheesecake with fresh cheese from Søtofte, summer's preserved berries, and perhaps the very first rhubarb served with homemade herbal tea or coffee from Just Coffee + a bit of the local, award-winning chocolate from Friis-Holm Chokolade // - Opportunity to purchase beer from Herslev Bryggeri, cider from Bjerregaarden, apple soda from Æbleland, and natural wine from places like Overdrevet and Ørnberg Vin. Program: (10:20 AM: Option to meet at Hovedbanegården and walk together - including a 30-minute walk via Skjoldungestien from Lejre Station directly to Hegnsholt) 12:00 PM: Lunch at long tables 2:00 PM: Tour and opportunity to shop in the farm shop Both lunch and the tour take place outdoors, so dress according to the weather. In case of rain, the long table lunch will be moved to the barn. The farm visit and long table lunch are part of the Madland Festival 2024, taking place in and around Copenhagen from April 18th to 22nd. Madland is a food-political meeting point that sets the stage for and gathers those who eat and work to rethink food systems responsibly.
