Colombian Community Dinner

Next community dinner is up, a la colombiana! 29th of August, 18.00 ???? We will be making the show stopper soup from Bogotá, AJIACO. A-hee-ah-coh* The soup is traditionally made with three kinds of potatoes that are commonly found around the Bogotá landscape (criolla, pastusa and sabanera). This time, we will be using three Danish potato varieties with different starch amounts in them from Leon @hyldemarken to be able to get the creaminess in the soup. It comes with chicken, corn, capers and a little bit of cream. The star ingredients is the guasca, which I’ve discovered grows as a weed here in Denmark, and gives the soup it’s true aroma. Without guasca, it’s just a chicken and potato soup. This is the most comforting dish I grew up with in Bogotá. If you feel like a you need a little hug or a pat on the back, this is your night to come! There will be fried plantain to start off the night and an arequipe (dulce de leche) and jam swiss roll also known as brazo de reina. This dinner also represents what la periferia is all about. Celebrating international cultures and supporting the danish ecosystem of farmers at the same time. It can be done, or at least we’re trying! Nos vemos la próxima semana!
