On October 28, we have two Italian-born friends, Salvatore and Vittorio - a.k.a. Savi - taking over our kitchen for a special pop-up dinner. Salvatore has an extensive fine dining experience: back in Italy he worked at Palazzo Petrucci (1 Michelin star) and il Parco (1 Michelin star), while in Copenhagen he worked at Geranium ( 3 Michelin stars), and now is a part of the Il Buco team. Vittorio - after getting a masters degree in Food Policy in London - moved to Amsterdam to further explore food systems and cooking, Vitto now finds himself cooking for Chateau Amsterdam, in a high-energy kitchen, and exploring the world of private dining and crafted experiences. Their dinner service on October 28th will start at 17.30pm and 20.00pm and is kr. 425 / person for the 5 course. Expected menu: HOMEMADE KOMBUCHA kombucha shot with seasonal flowers harvest in Copenhagen NAPOLI MEETS CHINA Gyoza filled with traditional Genovese Napoletana Stew FRESH HOMEMADE SPAGHETTI Spaghetti alla chitarra, sour butter, beetroot LEEK TOPIATTO Roasted Leek, smoked cheese sauce & katsuobushi flakes CALDO & FREDDO Pear Tarte Tatin with homemade brown butter gelato.
