We're small bootstrapped team making subway sandwiches: Tobias and his brother-in-law Andrea (Calma) Rounding out the team is Dominik, former head chef who helped open Locale21 and has worked at both Levi and Calma. It all starts with our subs. We bake, smoke, pickle, and make everything from scratch in our own kitchen. But Ellis is also meant as a proper neighborhood deli — a spot on Enghave Plads where the same elements we use in our subs can be bought by the counter or by weight: porchetta, charcuterie, cheese, pickles, and other good stuff. And a place to just as easily hang out over a beer, wine on tap, or of course a Sports-Cola. It all starts with their subs.
