Marcus Saugmann loves creating food that feels both elegant and exciting, while keeping the ingredients at the centre. This 5-course pop-up dinner is a great chance to experience his cooking, his ideas, and his passion for fine dining in an intimate setting. One Tart & One Cucumber
- Butter Tart served with langoustine and rosehip & dill infused cucumber with mushroom and caviar

Cannoli with Bacalao
- Cannoli filled with bacalao, caramelized onions and pistachio

Tuna with Pomelo & Shiso
- Bluefin Tuna turned with pomelo and lime leaves with a strawberry and jasmine sauce and shiso

Beef Strip with Bone Sauce & Guinness Emulsion
- Danish Beef with a bone marrow sauce, guinness emulsion and carrot
